Southern Banana Pudding Cake
Do I really need to say anything about this Banana pudding cake? Do I really need a bunch of words, or will photos and the recipe say it all?
Well, I do have to add words, cause that’s what a post is all about (at least that’s what I’ve been told). Here’s what I’ll add and then you can just scroll on down to the photos and recipe. Banana pudding has memories attached to it for me. It’s like spring, comfort, cool, creamy & bursting with sweet goodness to me. Maybe because we always had it at Easter events. This recipe captures all of that, plus more.
Oh, also…..I totally sang/spelled “Bananas” in Gwen’s voice to ensure I added the right amount of n’s to the word bananas (see, you did it too didn’t you?).
Just a little note about the recipe: Rather than adding whipped cream (as you’d find in banana pudding), I added heavy cream whenever I could to give that extra decadence, without the runny consistency you can get from whipped cream. Plus I knew wasn’t going to finish this cake in one sitting so I just figured if it’s going to sit, I didn’t want to use the whipped cream. But I for sure, wanted to incorporate the extra creamy as much as a I could.
Start by making your pudding according to the instructions on the package & let chill.
Next bake your cake according to the instructions on the package using a round cake pan. (I Cut the cake into 2 layers, then had enough batter to create a 3rd layer-half of a baking pan filled with batter).
While your cakes are baking, make your icing and keep at room temperature.
With your 3 cake layers cooled and ready to go, divide the pudding in half and gently spread it on top of 2 of the layers.
Add crumbled Nilla wafers & banana slices on top of the pudding.
Gently stack your layers, adding the 3rd layer to the top.
Carefully add your icing to the top and sides of your cake.
Add Nilla wafer crumbles to sides and top for decoration.
Add bananas to top for decoration.

I am honestly salivating looking at this. I think I might give this one a try for Easter. If you like banana desserts one of my all-time favourites is called Banoffee Pie. It’s a popular English dessert and AMAZING. Can’t wait to give your recipe a taste 🙂

This Banana cake was so dang good, messy, but so good! I think it would be great for Easter, something about it just reminds me of spring.

Julie, right?! It really didn’t last long in my house. I was thinking, you could also make this as layered pudding and cake parfait cups, that would be cute too.
I’ve personally never been big on banana, but all four of my boys love them, so I’ve been looking for good banana recipes. I’ll have to give this banana pudding cake a go!

I’ve been enjoying banana is in pancakes and muffins recently. Because I been buying them and forgetting to snack on them. This Banana cake look so indulgent and delicious.
