Print Options:

Sun Dried Tomato + Basil-Lemon Pasta

 1 Box of pasta ( I used Bucatini)
 ½ cup Chicken stock
 ½ cup White wine
 ¼ cup Basil (chopped)
 2 cups Spinach
 5 Sun dried tomatoes
 2 tbsp Oil from sun dried tomatoes
 ½ cup Parmesan cheese
 2 Lemons
 3 Cloves of garlic
 1 pinch Salt + Pepper

Cook the pasta according to directions on the box.

Once the pasta is near complete, heat the skillet over medium heat. Cook the white wine, allowing the alcohol to burn off (about 2-3 minutes).

Add chicken stock to the white wine and allow it to come to a slight simmer.

Using a micro-planer (or simply chop it up) add the garlic to the pan.

Cut the sun dried tomatoes into strips and add to the pan.

Add the juice of 1 lemon.

Add the cooked pasta to the skillet.

Add in the spinach, chopped basil & sun dried tomato oil. Toss everything together until well combined.

Sprinkle the Parmesan cheese over the pasta and give it a final toss.

Add lemon slices for squeezing over the top, and salt & pepper to taste.
