Chop the dried fruits individually (because size/shape differs and you want the fruits to be somewhat similar in size)
Chop the walnuts (or whatever nut you choose).
Add the shredded coconut, and all your copped ingredients to to a bowl and mix. The coconut and nuts will adhere to the chopped dried fruit and make the mixture less sticky.
Add in the dried cranberries, and give it a final mix.
In a microwave safe bowl, add only 1 cup of chocolate chips, and 1 teaspoon of coconut oil, place in the microwave for 15 seconds, then stir. You will likely need to repeat this 3 times (45 seconds) until the chocolate melts.
**Note: don't worry about getting all the chips fully melted, the residual heat will do it for you. Don't over heat.
On a sheet pan lined with parchment paper (or if you have mini muffin pans like I did) spoon out a small amount of melted chocolate.
Repeat this until the bowl is empty.
Using half of the mixture, add the fruit & nuts to the top of the chocolate circles. You can place the mixture in the middle of the chocolate, or go all the way out to the edges, it's your choice!
**Note: Press the mixture into the chocolate just a bit. You want the chocolate to touch everything, so when the chocolate hardens it will harden with the mixture in place.
Place your lined baking sheet in the fridge to allow the chocolate to cool.
Repeat steps starting with melting your chocolate with coconut oil.
