Sun dried tomato & basil – lemon pasta
I know my family say’s “It’s so good, we love it” quite often, but for real..THIS IS THE ONE! No joke, I made this lemon pasta with sun dried tomato & basil about 3 times in 2 weeks. Oh, and I’m talking about double batches each time…YEAH! I know the name is a mouthful, but you’ll be so happy once you get a mouth FULL of this pasta (*see what I did there).
It’s the sheer simplicity of tasting each ingredient, but also they way the flavors partner up so well. Then, adding a squeeze of fresh lemon once it’s plated up, it’s just so perfect. The kids were a bit skeptical, it looked too simplistic to them. Boy, this was one of those times they were happy I practically forced them to take a bite. After that it was all over, they loved it.
I’m telling you, I couldn’t keep enough of this on hand. I was even making two boxes of pasta at a time. They were getting packed up for lunches, left over dinners, I may have even had some for breakfast. The flavors were so clean and bright. Keep plenty of lemon wedges on hand, each reheated plateful will taste just like day one after you give it a good squeeze of lemon.
Aside from how bright and delicious this lemon pasta was, it was easy to make. We typically don’t get home until late during the weekdays, so throwing together only took as long as boiling the pasta water. Honestly, I have to say that really was the longest part of this recipe.
Ya’ll you’ve gotta give this a try. Come back and I dare you to tell me it wasn’t as good as I said it was. This is a for sure winner.
