Lemon Squares with a Blueberry Twist
Summers coming and I’m ready for some bright and zingy flavors! Whether you call them lemon squares or lemon bars, they’re my husbands favorite, and I’m whipping up this bright zesty treats. So off I went, scrolling through Pinterest and I came a couple a recipes that put a twist on the good old classic. Some included raspberry, and even one with buttermilk (I may be coming back to that recipe). However, for this post, I landed upon these tangy blueberry beauties!
So I mentioned that lemon squares are my husbands favorite, but in all these 15 years. I’ve NEVER made them! WHAT!? I know, right? I’ve just always thought they were so much harder than they turned out to be. One thing you can count on, is if you’re seeing a recipe or craft here, then it was totally doable for the person under the strictest of time constraints.
I can’t believe I’ve slept on this recipe for so long, ya’ll. Look how easy it was…
The crust was made up of 3 simple ingredients:
- powdered sugar
The filling was just as simple:
- fresh lemon juice
*** The one piece of advice I got from my husband was less sugar. Next time, I’ll eliminate the sugar in the crust and use less in the filling.
Here’s the recipe that I used from Lemon Tree Dwelling. This will probably be my go to recipe, just because it was so simple!
