Craisin Apple Chicken Salad
The summer heat winding down (finally!), and the apples are in full swing over at the farm. So naturally, I’m making my usual fall stop at the farm, picking up some of my favorite apples and tossing them into this craisin apple chicken salad. Whether you make it into a lettuce wrap or tortilla wrap, you can’t go wrong with this easy meal.
With all the back to school madness, the last thing I want to do is cook a big meal. Now of course I still do, but on those days when I just can’t even find the time, I have a few recipes that require little to no heat. This craisin apple chicken salad is one of my go-to’s for a quick dinner that’s not heavy on the stomach either. Oh, and I’ve opted out of the mayo that you’d usually use in a recipe like this. Instead, I used greek yogurt, smart right?
Another smart move is pre-cooking your chicken. If you know it’ll be a busy day, I suggest turning on your stove top and pan grilling in the morning…or better yet the day before. You have to let your chicken cool before adding all the ingredients anyway, so this step is perfect for a pre-prep.
This is one of those recipes that’s even better on the second day. By day 2 the flavors have had a chance to get to know each other and really start to get along quite nicely.

Wash & pat your chicken dry, then add salt & pepper (about 1/4 tsp of each)
Over medium heat, cook chicken until done. Juices should run clear. Once cooked, let the chicken rest, then chop it into chunks
Chop your apples & onions. (I don't like big chunks of onion, so I used a cheese shredder box on the smallest holes to really grind the onion down)
Toss your apples, onion, craisins & chicken into a bowl.
Add yogurt & salt + pepper (to taste), and mix.

Again, you can assemble these using either lettuce or tortillas. But honestly, if you don’t want the trouble of either, I’ve eaten this right from a bowl.

I always think of chicken salad as a summer dish but with the addition of the apples here, it is a perfect fall lunch!

I have a similar chicken salad recipe, but I use mayo and I put in pecan chips! i will need to try the yogurt version! It looks amazing!!!
