Caramelized Onion & Apple Chutney
Sticky & sweet, this caramelized onion & apple chutney gets it’s tang from balsamic vinegar that’s cut by creamy goat cheese. A perfect app for guest or devouring alone! So let’s dig in.
Let me start by saying this, I BARELY shared this with my family. I’ve even saved some chutney and tucked waaayyy in the back of the fridge…ssshh! Immediately after eating this, I knew I should have doubled the recipe.
I love anything that has balsamic vinegar. The way it cooks down with added sugar and creates a sticky sauce that’s just so perfect…hits you right in the taste buds. The apples team well with the creamy, cool goat cheese to give this a bright lift, and the caramelized onions & garlic add deep flavor. Finally, red pepper flakes round out the flavor with a quick kick of heat.
Here’s a tip for you, don’t just roast one head of garlic. Since your putting in the time, throw in a couple heads, then store what you don’t use in a container in the fridge. Roasted garlic is something you can add to so many recipes. When garlic is cooked down, it loses its peppery bite, and takes on a more buttery feel and flavor.

Pre-heat your oven to 350 degrees F. Place your garlic on a sheet pan or any other oven safe container and roast for about 50 minutes to an hour or until garlic becomes soft.
In the meantime, heat a skillet on the stovetop, add the oil, and caramelize the onions.
Squeeze cooled garlic bulb into the saucepan along with onions, sugar, vinegar, apple & pepper flakes.
Once the ingredients come to a boil, reduce heat and add the cornstarch thickener.
Simmer until chutney thickens.
Try it this way:
Lightly toast naan bread in a skillet, spread goat cheese, and add a dollop of chutney.
Top off with leafy greens like arugula.

drooling!! wonder if this could be done in the oven?
Sorry my reply is coming so late 🙁 Yes I would say a light toast in the oven would give it a great crunch, I would just add the goat cheese after it comes out. That’ll allow the cheese to lightly melt without being too runny.
